Orange-Cranberry Muffins

Oranges are high in a flavonoid called narirutin — an anti-inflammatory agent, antioxidant and a metabolite. Oranges are rich in vitamin C and fibre, making them a great choice for weight loss. They provide fewer calories compared to their volume. Cranberries are high in antioxidants and fibre that can aid digestion and weight loss. They are also rich in polyphenols that can support weight loss by increasing metabolism. Flaxseed is high in fibre, low in carbs, and contains Omega-3 fatty acids, which can help you drop pounds.


  • 1/2 cup oats flour
  • 1/2 cup whole-wheat flour
  • 1 1/2 teaspoons baking soda
  • 1/4 cup finely-ground flaxseed powder
  • 1/2 cup dried cranberries
  • 1/2 pecans, finely chopped
  • 1/3 cup dark brown sugar
  • Stevia as per taste
  • 1 egg
  • 1/4 cup orange juice
  • 2 tablespoons grated orange zest
  • 1/2 cup nonfat milk
  • 1/4 cup (75 g) omega-3-rich margarine, melted
  • A pinch of salt


  • Preheat oven to 400°F and line a muffin pan with muffin cups. In a large mixing bowl, sift together soy flour, whole-wheat flour, baking soda, and salt.
  • Stir in the flaxseed, cranberries, pecans, brown sugar, and stevia. Whip egg, orange juice, orange peel, and milk in a separate bowl, and stir in melted margarine.
  • Add the liquid mix to dry ingredients and stir until moist. Add the batter into the muffin cups. Bake until golden brown.
