Orange-Cranberry Muffins

Ingredients

  • 1/2 cup oats flour
  • 1/2 cup whole-wheat flour
  • 1 1/2 teaspoons baking soda
  • 1/4 cup finely-ground flaxseed powder
  • 1/2 cup dried cranberries
  • 1/2 pecans, finely chopped
  • 1/3 cup dark brown sugar
  • Stevia as per taste
  • 1 egg
  • 1/4 cup orange juice
  • 2 tablespoons grated orange zest
  • 1/2 cup nonfat milk
  • 1/4 cup (75 g) omega-3-rich margarine, melted
  • A pinch of salt

Method

  • Preheat oven to 400°F and line a muffin pan with muffin cups. In a large mixing bowl, sift together soy flour, whole-wheat flour, baking soda, and salt.
  • Stir in the flaxseed, cranberries, pecans, brown sugar, and stevia. Whip egg, orange juice, orange peel, and milk in a separate bowl, and stir in melted margarine.
  • Add the liquid mix to dry ingredients and stir until moist. Add the batter into the muffin cups. Bake until golden brown.
