- 2 tbsps. oats flour
- 2 whole eggs
- 2 cups shredded zucchini
- 1 tsp. of chopped cilantro
- 1 medium onion, chopped and caramalised
- 2 tsps. olive oil
- Sea salt and pepper
Method
- Sift the oats flour into the eggs and beat them together.
- Add the shredded zucchini, sea salt and pepper, chopped cilantro, onion, chopped and caramalised.
- Heat a cast iron skillet over medium-low heat and use olive oil to coat the pan.
- Spoon the mixture into the pan in size of pancake you want.
- Cook for a few minutes and flip over when golden brown.
- Top it with nut butter of your choice.
