Savoury Zucchini Pancakes

Pancakes don’t always have to be sweet. Here’s a delicious twist on breakfast pancakes that are savoury, delicious and healthy. The whole family can enjoy them.


  • 2 tbsps. oats flour
  • 2 whole eggs
  • 2 cups shredded zucchini
  • 1 tsp. of chopped cilantro
  • 1 medium onion, chopped and caramalised
  • 2 tsps. olive oil
  • Sea salt and pepper


  • Sift the oats flour into the eggs and beat them together.
  • Add the shredded zucchini, sea salt and pepper, chopped cilantro, onion, chopped and caramalised.
  • Heat a cast iron skillet over medium-low heat and use olive oil to coat the pan.
  • Spoon the mixture into the pan in size of pancake you want.
  • Cook for a few minutes and flip over when golden brown.
  • Top it with nut butter of your choice.
