Soaking Nuts And Seeds

Some recipes need nuts and seeds to be soaked to improve their texture and make them easier to process. Soaking also helps release their enzyme inhibitors, which can improve their digestion and enhance nutrient absorption. To soak, take the required portion of nuts or seeds and place in a glass bowl with at least double the amount of water. Cover the bowl and soak for at least 30 minutes. Discard the soaking water and let the nuts or seeds rest in a strainer for a few minutes before using them.
