Egg Muffins: Bite-Sized With Big Benefits

If you’re tired of the regular omelettes or boiled eggs, try these egg muffins. This bite-sized snack is a health powerhouse with all the added veggies, and is also fun to have. Easy to eat, it will appeal to the different age groups in the family – from toddlers to seniors.


  • 6 eggs
  • 1 cup diced green bell pepper
  • 1 cup diced onion
  • 1 cup spinach
  • 1/4 tsp. salt
  • 1/8 tsp. ground black pepper
  • 2 tbsp. water


  • Heat the oven to 350 degrees F.
  • Oil the muffin cups.
  • Beat eggs together. Mix in bell pepper, spinach, onion, salt, black pepper, and water.
  • Pour the mixture into the muffin cups. Bake in the oven until muffins are done in the middle.
