In this recipe, the frozen acai purée is blended with coconut to create a rich, flavorful, smoothie. Coconut milk and cream are sources of healthy fats called medium-chain triglycerides (MCTs). Research has found that consuming MCTs promotes weight loss by decreasing appetite and increasing energy.
- 100 g frozen acai, cut into small chunks or a tablespoon of freeze-dried acai berry powder
- 2 tablespoons chopped dry fruits and mixed seeds
- 1 date, pitted
- 2 teaspoons fresh lemon juice
- 300 ml coconut milk
- ½ teaspoon vanilla
- Combine all the ingredients in a blender and blend on high speed until smooth and creamy. Have immediately!
