Nut Butter-Banana Muffins

According to a report from the American Heart Association, nuts, and by extension nut butters, include protein, fibre, vitamins, minerals and antioxidants, delivering a host of health benefits. Make sure that the nut butters do not contain added salt or sugar. Eating nut butter regularly can also improve your cholesterol levels, reduce inflammation, and boost weight loss efforts. Mind the portions. Bananas are low in calories, high in fibre, and contain resistant starch, which can promote feelings of fullness and potentially aid in fat loss. However, bananas also contain natural sugars and calories, so don’t overdo.

Ingredients

  • 1 small cup cashew nut/walnut/almond butter
  • 2 eggs
  • 2 medium ripe bananas
  • 1 tbsp honey or liquid stevia
  • ½ tsp baking soda
  • Dark chocolate chips

Method

  • Preheat the oven to 400°F. Grease a muffin pan with spray or line cups with paper liners.
  • Place all of the ingredients except for the chocolates chips in a blender and mix to combine.
  • Spoon batter into the prepared muffin cups, and sprinkle each muffin with a few chocolate chips.
  • Bake until the edges are brown.
  • Insert a toothpick into the centre of the muffin. If it comes out dry and clean, your muffin is done.
  • Allow your pan to cool on a wire rack for at least 10 minutes. Gently loosen each muffin from the pan.
  • Store in an airtight container for up to one week.
