Use beetroot right

Cook beets with skin intact. Steaming and roasting beets can minimise ‘bleeding’. To preserve their brilliant colour add lemon juice or vinegar to cooking water. If you don’t want beets to stain the salad, cut them in thin slices and toss them in vinaigrette and add to the salad just before you serve it.
