- 1 cup chickpeas
- 1 finely-chopped red onion
- 1 tomato, diced
- 1 cucumber, diced
- 1 plain boiled potato
- 1 tablespoon freshly squeezed lemon juice
- 1 tablespoon chopped cilantro
- Salt to taste
- ¼ tsp of cumin power
- ¼ tsp of coriander power
- ½ teaspoon dry mango powder (optional)
Method
- Soak chickpeas overnight, drain them the next morning and pressure-cook. Once they’ve cooled down place them in a mixing bowl.
- Add in the potato, tomato, cucumber, and onion to the bowl. Put in the spices. Drizzle with the lemon juice. Mix well.
- Top with chopped cilantro and enjoy.
