Tangy Chickpea Salad

Chickpeas are a great source of protein for those looking to incorporate more plant-based proteins into their diet. The salad is tangy and fun. It’s also low in calories.

Ingredients

  • 1 cup chickpeas
  • 1 finely-chopped red onion
  • 1 tomato, diced
  • 1 cucumber, diced
  • 1 plain boiled potato
  • 1 tablespoon freshly squeezed lemon juice
  • 1 tablespoon chopped cilantro
  • Salt to taste
  • ¼ tsp of cumin power
  • ¼ tsp of coriander power
  • ½ teaspoon dry mango powder (optional)

Method

  • Soak chickpeas overnight, drain them the next morning and pressure-cook. Once they’ve cooled down place them in a mixing bowl.
  • Add in the potato, tomato, cucumber, and onion to the bowl. Put in the spices. Drizzle with the lemon juice. Mix well.
  • Top with chopped cilantro and enjoy.
