Ingredients
- 2 medium beetroots, thinly sliced
- 1 large carrot, thinly sliced
- 1 spring onion, thinly sliced
- 1 tbsp. tamarind paste
- 5 mint leaves
- Olive oil
- Rice vinegar (or apple cider vinegar)
- Sea salt
Method
- Sauté the spring onion with a bit of olive oil until golden in colour. Add the carrot and beetroot.
- Cover with water and let it boil for 15 minutes.
- Add tamarind paste, 4-5 mint leaves, and a pinch of sea salt. Put it all through a blender.
- Finish with 1 tsp rice vinegar and check for salt at this point.
- Let it cool down and serve cold garnished with a mint leaf.
