Store Cheese Right

How you store cheese depends on the type of cheese and its state when you buy it. Keep the freshest cheeses tightly covered and refrigerated for maximum a week. Store whole young goat or other small whole cheeses in containers in the coldest part of your refrigerator. Ditto soft-ripened and other soft-textured or creamy cheeses, but not for too long or the rinds will become slimy and the interior hard. Store firm cheeses in a plastic bag in the refrigerator door or the warmest part of the refrigerator. Check the cheese before eating for bad odours, cracking rinds, or discoloration, all of which indicate that the cheese should be discarded.
