Root Vegetables: Anti-inflammatory Powerhouses

Sweet potatoes, carrots, parsnips, turnips, radishes, beets are all anti-inflammatory and antioxidant powerhouses. The beta-carotene in sweet potatoes has been shown to fight inflammation, and eating them regularly can help ease joint pain and other symptoms of inflammatory conditions like arthritis. Both carrots and sweet potatoes are rich sources of vitamin A, which helps digestion tract, protect vision, and boost immunity. Sweet potatoes contain anthocyanin pigments and beets are full of compounds called betalains, both of which reduce the production of inflammatory enzymes.
