Low-Cal Cucumber Soup

Cucumbers are low in calories and contain a good amount of water and soluble fibre. They’re ideal for promoting hydration and helping weight loss.


  • 1–2 medium seedless cucumbers
  • 1 onion
  • 2 garlic cloves
  • 1 tablespoon of fresh coriander, finely chopped
  • 1 cup buttermilk
  • 1 cup plain low-fat yogurt
  • Salt and pepper, to taste


  • Purée cucumbers, onion, garlic cloves in a blender. Add buttermilk and blend again.
  • Pour into a serving bowl and whisk in yogurt.
  • Season to taste with salt and pepper and add finely-chopped coriander.
  • Cover and chill for an hour before serving.
