Low-Cal Cucumber Soup

Cucumbers are packed with antioxidants that can help improve skin health and lower inflammation. Low in calories and rich in fibre, cucumbers are a hydrating hero due to a high water content, and promote a feeling of fullness. Ingredients

  • 1–2 medium seedless cucumbers
  • 1 shallot
  • 1 garlic clove
  • 1½ tablespoons fresh dill
  • 1 cup buttermilk
  • 1 cup plain Greek yoghurt
  • Salt and pepper, to taste

Method

  • Purée cucumbers, shallot, garlic clove, and dill in a food processor or blender.
  • Add buttermilk and blend again.
  • Pour into a serving bowl and whisk in Greek yoghurt. Season to taste with salt and pepper. Cover and chill for an hour before serving.
