These delicious energy balls or laddoos will make a perfect snack mid-morning or early evening.
- 1 and ½ cup cashew nuts, walnuts, and almonds
- 1 cup dried apricots
- 8-10 large Medjool dates
- 4-6 tbsp small dark chocolate chips
- 4-6 tbsp good quality cocoa powder
- Put the dates, apricots and cashews, walnuts and almonds in the food processor and blend until smooth.
- Add the chocolate chips and pulse just a bit to mix them in.
- Create quick energy balls or laddoos out of the mixture.
- Coat each of the laddoos in cocoa powder.
