Black Carrots, Anyone?

Black carrots, that get their colour from anthocyanins, are packed with nutrients. The antioxidant and anti-inflammatory properties of anthocyanins reduce oxidative stress and ease the symptoms of arthritis. Vegetables like black carrots protect against cell damage and lower inflammation throughout the body, including in your joints. They also help in relieving constipation and bloating. They’re good for weight loss as well. Have them as a healthy snack.

Steam your veggies, ditch the fryer. Avoid boiling them because while steaming preserves the nutrients in the vegetables, when you boil them, vitamins and antioxidants might leach out in the water. While cooking them use olive oil, which contains anti-inflammatory compound oleocanthal. Don’t overcook them so they hold in the nutrients.
