Broccoli contains sulfur-containing compounds like glucosinolates, which break down when heated. They release volatile compounds, some of which have a strong, unpleasant smell. To prevent this smell, avoid overcooking. If you’re steaming it, cover broccoli only partially and, if you’re boiling it, don’t cover it at all so the sulfur compounds can escape. You can also use a slice of bread on top of the broccoli to absorb some of the smell. Don’t cook it in an aluminum pot or pan. The smell will worsen.
