Cucumbers are low in calories and contain a good amount of water and soluble fibre. They’re ideal for promoting hydration and helping weight loss.
Ingredients
- 1–2 medium seedless cucumbers
- 1 onion
- 2 garlic cloves
- 1 tablespoon of fresh coriander, finely chopped
- 1 cup buttermilk
- 1 cup plain low-fat yogurt
- Salt and pepper, to taste
Method
- Purée cucumbers, onion, garlic cloves in a blender. Add buttermilk and blend again.
- Pour into a serving bowl and whisk in yogurt.
- Season to taste with salt and pepper and add finely-chopped coriander.
- Cover and chill for an hour before serving.
