Healthy Zucchini-Tomato Soup

This power-packed soup is a nutrient-rich and low-calorie dish. Zucchini contains fibre that keeps the gut healthy and promotes good digestion. Adding zucchini to your dishes keeps you full longer, helping weight management. According to 2020 research published in the ‘Journal of King Saud University – Science’, tomato is known to possess bio-active phytochemicals, including carotenoids, flavonoids, beta-carotene, and lycopene, which have all have been shown to elicit improvements in weight, body mass index, blood pressure and inflammatory factors.

Ingredients

  • 2 medium zucchinis, finely chopped
  • 2 medium carrots, chopped
  • 1 big red bell pepper, chopped
  • 3 medium tomatoes, finely chopped
  • 1/4 cup spring onion, finely chopped
  • 3 garlic cloves, finely chopped
  • 2 teaspoons unrefined sea salt
  • 2 teaspoons dried thyme, rosemary, oregano, or other herbs for added flavour
  • 4 cups water

Method

  • Put all of the ingredients in a large stock or sauté pot.
  • Bring to a gentle boil, then lower the heat, cover, and let simmer gently for 30 minutes.
  • Serve warm.
