Tofu may help you to lose weight by keeping you fuller for longer on fewer calories than meat. Here’s how you could make it.
- 2 cups firm tofu, drained and crumbled
- 2 onions, diced
- ½ cup finely chopped red bell pepper
- ½ cup finely chopped baby spinach
- ½ cup finely chopped carrot
- 1 medium tomato, chopped
- 2 green chillies, finely chopped
- 2 cloves garlic, minced or pressed
- Salt to taste
- Coriander for garnishing
- Cook in olive oil
- Saute onions in olive oil.
- Add garlic, chillies, red pepper, tomato, and carrot.
- Add ¼ cup water and let it cook for a few minutes.
- Add crumbled tofu and salt to taste, and cook for another few minutes.
- Add finely chopped coriander leaves for garnishing.
- Have it with a slice or two of brown bread.
