Ingredients
- 6 eggs
- 1 cup diced green bell pepper
- 1 cup diced onion
- 1 cup spinach
- 1/4 tsp. salt
- 1/8 tsp. ground black pepper
- 2 tbsp. water
Method
- Heat the oven to 350 degrees F.
- Oil the muffin cups.
- Beat eggs together. Mix in bell pepper, spinach, onion, salt, black pepper, and water.
- Pour the mixture into the muffin cups. Bake in the oven until muffins are done in the middle.
