Chocolate-Avocado Pudding

Ingredients

  • 2 big, ripe avocados
  • 1/3 cup cocoa powder, unsweetened
  • 1/3 cup maple syrup
  • ½ cup coconut milk
  • 2 tsps vanilla extract
  • 2-3 tbsps chopped hazelnuts and/or almonds
  • ¼ tsp sea salt

Method

  • Cut each avocado in half, remove its pit and then transfer the flesh into a blender or a food processor.
  • Add cocoa powder, maple syrup, vanilla, and coconut milk and then blend until smooth. Sprinkle with sea salt and give it a mix.
  • Divide pudding evenly among four bowls, top each bowl with nuts, and then serve.
