Instead of the heavy cream, flour and butter, make a healthy ‘cream’ sauce with low-fat buttermilk. Thicken a cup of buttermilk with a tablespoon cornstarch; flavour with herbs or thicken with vegetable purees. To thicken a cream sauce with vegetable puree, select a starchy vegetable like potatoes, winter squash, or cauliflower.
