Healthy Oats-Flaxseed Cookies

Oatmeal doesn’t have to always come in a bowl. These breakfast cookies are very healthy and you could even them as a treat anytime. Oats support longevity by promoting heart health through cholesterol and blood sugar regulation, aiding in weight management, supporting digestion, and reducing chronic inflammation, as well as providing essential nutrients like fibre and antioxidants. Flaxseeds are abundant in omega-3 fatty acids, fibre and vitamins. They help reduce inflammation, lowering risk factors for chronic diseases like heart disease, diabetes, and certain cancers, and protecting cells from oxidative damage, influencing hormonal pathways, and supporting a healthy gut microbiome, which is linked to brain function and weight management.

Ingredients

  • 1 tablespoon flaxseed powder
  • 1 cup organic rolled oats
  • ¼ cup oat flour
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • ¼ cup almond butter
  • ½ teaspoon vanilla extract
  • 3 tablespoons maple syrup
  • 3 tablespoons coconut sugar
  • ½ cup chocolate chips
  • Water

Method

  • Combine the water with flaxseed powder and whisk, allowing the mixture to sit while you mix the other ingredients.
  • Mix the oats, oat flour, baking powder, salt, and cinnamon in a separate bowl.
  • Now add the nut butter, vanilla extract, maple syrup, and coconut sugar to the flax-water mixture. Stir in the chocolate chips.
  • Cover a cookie sheet with parchment paper. Use a large spoon to drop the dough onto the cookie sheet. Gently flatten the dough a bit.
  • Bake at 350° for 15 minutes. This will make 12-14 cookies.
