Ingredients
- 3-4 medium-sized carrots, peeled and grated
- 2 small tomatoes chopped
- 2 tablespoons olive oil
- 1 teaspoon black mustard seeds
- 4-5 fresh curry leaves
- Juice of 1/2 lemon
- Salt to taste
Method
- Place grated carrots and tomato pieces in a bowl. Add salt and squeeze juice of half a lemon. Mix well.
- Heat oil in a small frying pan over medium heat. Add mustard seeds until they start spluttering. Add curry leaves and then turn off the heat. Allow to cool in pan.
- Pour spiced oil on to the carrots and tomatoes. Mix well with a fork. Add more salt or lemon juice if necessary.
