Grated Carrot-Tomato Salad

Ingredients

  • 3-4 medium-sized carrots, peeled and grated
  • 2 small tomatoes chopped
  • 2 tablespoons olive oil
  • 1 teaspoon black mustard seeds
  • 4-5 fresh curry leaves
  • Juice of 1/2 lemon
  • Salt to taste

Method

  • Place grated carrots and tomato pieces in a bowl. Add salt and squeeze juice of half a lemon. Mix well.
  • Heat oil in a small frying pan over medium heat. Add mustard seeds until they start spluttering. Add curry leaves and then turn off the heat. Allow to cool in pan.
  • Pour spiced oil on to the carrots and tomatoes. Mix well with a fork. Add more salt or lemon juice if necessary.
