- 50g of blackberries
- 10 dates
- 50g of desiccated coconut plus extra for rolling
- 200g of porridge oats
- 1 vanilla bean scraped
- 1 tsp of cinnamon
- In a food processor blend the oats until the consistency of flour. Add in the rest of the ingredients and blend until fully combined.
- Roll the mixture into 16 balls and roll each ball in desiccated coconut until fully coated.
- Place in the freezer for half an hour and then place in the fridge until serving. These will last 2 weeks in the fridge.
