Balsamic Chicken

Here’s a hearty dish that is excellent for weight loss. It is a high-protein, low-calorie meal that uses lean chicken breast and bold, flavourful balsamic vinegar. Enjoy it with a fresh salad or brown rice.

Ingredients

  • 6 chicken breasts, boneless, skinless and cut into halves
  • 2 onions, thinly sliced
  • 4 ripe tomatoes, chopped
  • 2 tbsp of extra virgin olive oil
  • 1 teaspoon of crushed garlic
  • ½ cup of balsamic vinegar
  • 1 teaspoon of dried oregano
  • 1 teaspoon of dried rosemary
  • ½ teaspoons of dried thyme
  • Salt for taste
  • A dash of black pepper

Method

  • Season the chicken breasts on both sides with the garlic. Rub the salt and black pepper.
  • Place a large skillet over medium heat. Add in the olive oil and once hot, add in the chicken. Cook for 3 to 5 minutes on each side or until browned.
  • Add in the chopped onions. Continue to cook for 5 minutes.
  • Add the chopped tomatoes and balsamic vinegar over the chicken.
  • Allow the chicken to simmer until cooked through.
  • Season it with the dried oregano, dried rosemary and dried thyme.
  • Remove and serve.
