Ingredients
- 6 teaspoons soy sauce
- 2 teaspoons olive oil
- 1 teaspoon sesame oil
- 2 large eggs, beaten
- 1 cup diced onion
- 1 cup diced carrots
- 8 oz mushrooms, sliced
- 1/2 cup green peas
- 4 cups cooked brown rice
- 3 green onions, sliced
Method
- In a bowl whisk together soy sauce and a spoonful of sesame oil and set aside.
- Heat a teaspoon olive oil in a large skillet over medium high heat. Add eggs and scramble until cooked through. Remove from pan and set aside.
- Heat remaining olive oil in pan over medium high heat. Add onions, carrots and mushrooms. Cook, stirring occasionally, until veggies are soft.
- Add peas to pan and cook until soft. Stir in cooked brown rice into pan breaking up any large lumps of rice. Add cooked eggs back to the pan.
- Add soy sauce and sesame oil mixture into pan and stir until ingredients are completely coated. Heat through and mix in green onions well. Serve hot. A light soup can complement the meal without being too heavy.
