Ingredients
- 1 head iceberg lettuce
- 1 head romaine lettuce
- 1 lb. plump tomatoes
- ¾ cup Greek or black olives, sliced
- ½ cup sliced radishes
- ½ cup low-fat feta cheese
Dressing
- 150ml olive oil or avocado oil
- 175ml fresh lemon juice
- 1 tsp. dried oregano
- 1 tsp. black pepper
- 1 tsp. salt
- 3-4 cloves garlic, minced
Method
- Wash and cut lettuce into pieces and slice tomatoes in quarters.
- Combine olives, lettuce, tomatoes, and radishes in large bowl.
- Mix dressing ingredients together and toss with vegetables. Put into a serving bowl.
- Crumble feta cheese over it all and enjoy!
