Ingredients
- 2 medium zucchinis
- 1 small finely-chopped onion
- 3 beaten eggs
- 5-6 tbsp. almond flour *
- 1 tsp. salt
- 1/2 tsp. ground black pepper
- Olive oil
* You could substitute almond flour with gram flour, which helps weight loss due to its low-calorie count, high nutrient content, and abundance of fibre and protein.
Instructions
- Grate the zucchini into a bowl and stir in the onion and eggs.
- Stir in 6 tbsp. of the flour, salt, and pepper.
- Heat a cast iron skillet over medium heat and add olive oil in the pan.
- When the oil is hot, lower the heat to medium-low and add batter into the pan.
- Cook the pancakes on each side, until browned.
