Versatile Hummus-Veggies Sandwich

A perfect heart-healthy vegetarian snack or lunch to go, this sandwich is a delicious way to fuel yourself up with wholesome ingredients. Enjoy fresh veggies and creamy hummus with multigrain bread. It’s an incredibly versatile sandwich. Mix it up with different flavours of hummus and different types of vegetables depending on your mood.

Ingredients

  • Pieces of thin-sliced multigrain bread
  • 1 tbsp hummus
  • 1 radish thinly sliced
  • 1 small red onion thinly sliced
  • 1 cucumber thinly sliced
  • 1 small carrot sliced
  • Slices or cubes of a small avocado
  • 1/4 cup sprouts
  • Salt and pepper to taste

Method

  • Spread hummus evenly on both bread slices. Or, you could even use avocado flesh, mixed with salt, pepper and a bit of olive oil, on one of the slices instead of hummus.
  • Start layering your vegetables onto the bread. Be sure to spread them out evenly.
  • Top with sprouts. Add a sprinkle of salt and pepper to taste.
  • Place the other slice of bread on top and give it a gentle press so everything stays in place. Enjoy!

Tip: If you use tomatoes, the sandwich can get soggy. So, add tomatoes only if you’re going to have your sandwich immediately.
