Stuffed Tomato With Cottage Cheese

Ingredients

  • 2 large tomatoes
  • 2 teaspoons extra virgin olive oil
  • 1 teaspoon white wine vinegar
  • 2/3 cup cottage cheese or paneer
  • 1/4 cup diced cucumber
  • 1/4 cup diced radish
  • 1 tablespoon chopped coriander of chives

Method

  • Trim off top 1/2-inch of the tomatoes and remove core. Scoop out some of the flesh to make a bowl. Remove seeds. Season interior of tomato shell with salt and freshly ground pepper.
  • Whisk together olive oil and vinegar. Add to it cottage cheese, cucumbers, radish, reserved tomato flesh and one tablespoon of coriander or the chives. Season to taste with kosher salt and freshly ground pepper.
  • Stuff cottage cheese into tomato shells and serve.
