Stuffed Bell Peppers

Bell peppers support weight loss by being low in calories, high in water and fibre, promoting fullness and boosting metabolism. Packed with vitamins like C and A, and antioxidants, they provide essential nutrients. A medium-sized bell pepper has only about 30-40 calories. Egg whites help weight loss by being high in protein and low in calories, promoting satiety to curb appetite and reduce snacking. Shiitake mushrooms are high in proteins and fibre.

Ingredients

  • 4 bell peppers, seeds removed and sliced into halves
  • 4 egg whites
  • 1 teaspoon of extra virgin olive oil
  • ½ cup of shiitake mushrooms, chopped
  • 2 cups of spinach, chopped
  • A dash of lemon and pepper seasoning
  • A dash of all-purpose seasoning
  • A dash of sea salt

Method

  • Place a large skillet over medium heat. Add in half a teaspoon of the olive oil. Once hot, add in the chopped mushrooms, half of one of the bell peppers, and the spinach. Stir well to mix. Cook until soft.
  • Season with the dash of sea salt, lemon and pepper seasoning and all-purpose seasoning.
  • Stuff the mixture into the bell pepper halves. Leave some space for the egg white mix.
  • Take the egg whites into a small bowl and beat lightly with an electric mixer. Pour into the bell pepper halves.
  • Place into a large baking dish. Place into the oven to bake until the egg whites are set.
  • Remove and serve immediately.
