Quinoa-Apricot Breakfast

Quinoa helps weight loss because of its high protein and fibre content that promotes fullness, which can reduce overall calorie intake. It also has a low glycaemic index, preventing blood sugar spikes, and contains nutrients like magnesium and B vitamins that support metabolism and energy levels. Apricots, too, are high in fibre, while being low in calories and fat. Fresh apricots contain about 48 calories per 100 grams. If you prefer dried apricots, know that they are more calorie-dense than fresh apricots because the water has been removed, concentrating the sugar and calories. Just don’t overdo them.

Ingredients

  • 1/2 cup dry quinoa
  • 1 1/2 cups rice milk or any nut milk
  • 1 cup chopped apricots (fresh or dry)
  • 1/4 teaspoon vanilla extract
  • 2 tablespoons golden raisins

Method

  • Rinse the quinoa seeds with water until water runs clear before cooking. 
  • In a medium saucepan over low heat, combine quinoa and milk. Cover and cook for 12-15 minutes until the quinoa is tender. Stir in vanilla, raisins and apricots. Enjoy warm.
