Greens have very little carbohydrates in them. They do have a lot of fibre, which makes them slower to digest. They have very little impact on blood glucose. In some diets, the carbohydrate in the greens are not even counted. This means lean, mean nutrition! In general, the darker the colour, the more nutritious the greens are. a variety of greens is always best, as each has its own constellation of nutrients. Choose many different shades of green, each has its own bevy of nutrients.
