Kale Salad With Grilled Chicken

Packed with protein, this salad has plenty to keep your family full for hours. When it comes to nutritional goodness, kale has it all: Vitamins K, C and D, bone-boosting calcium, as well as magnesium and iron. A single serving contains more absorbable calcium than a small carton of milk. It helps strengthen bones, and can build and repair your muscles without the risk of gaining fat. Chicken breast is a great source of lean protein, helping repair muscle tissue and other cells damaged during intense training.

Ingredients:

  • 2 tbsp of plain Greek yoghurt
  • 1 tsp of red wine vinegar
  • 1/4 teaspoon minced garlic
  • 1/4 teaspoon Dijon mustard
  • 1/4 teaspoon Worcestershire sauce
  • 3 cups of kale leaves
  • 2 tbsp of shredded Parmesan
  • 100g of sliced grilled chicken breast
  • 1 toasted whole-grain pita

Method:

  • Whisk together plain Greek yoghurt, red wine vinegar, a teaspoon of minced garlic, Dijon mustard, and Worcestershire sauce.
  • Toss together thinly-sliced kale leaves, shredded Parmesan, grilled chicken breast. Add the yoghurt dressing.
  • Top with a toasted whole-grain pita torn into small pieces. Enjoy!
