Ingredients
- 2 cups fresh spinach
- 2 stalks of broccoli
- 1 big onion, chopped
- 1 tomato chopped
- 2-3 garlic cloves, freshly-minced
- ½ tsp coriander-cumin powder
- red chilli flakes
- 1/4th cup coconut milk
- Olive oil for cooking
- Salt for taste
- Toasted pumpkin seeds (optional)
Method
- In a pan, heat some olive oil and sauté garlic and onions.
- Add in spinach, tomato, and broccoli with spices.
- Cook for 5-7 minutes and add water and veggie broth.
- Let it simmer for 12-15 minutes on low flame and then let it cool.
- Put it through the blender, remove, add coconut milk, and stir well.
- Garnish with toasted pumpkin seeds if you like.
- Serve it with garlic bread or bread sticks.
