Cooking Mushrooms

Mushrooms, both cultivated and wild, are low in calories and high in fibre content that will not only help in reducing weight but will keep you full longer. Before cooking, most fresh fungi need only to be cleaned — only a few varieties of wild mushrooms need to be peeled. If the stems are woody, trim the ends. Sautéing and stewing are the most popular methods. Fresh mushrooms have a lot of water, which may need to be drained off or boiled to evaporate. Mushrooms preserved by drying, which intensifies their flavour, need to be soaked before use.
