Here’s a hearty dish that is excellent for weight loss. It is a high-protein, low-calorie meal that uses lean chicken breast and bold, flavourful balsamic vinegar. Enjoy it with a fresh salad or brown rice.
Ingredients
- 6 chicken breasts, boneless, skinless and cut into halves
- 2 onions, thinly sliced
- 4 ripe tomatoes, chopped
- 2 tbsp of extra virgin olive oil
- 1 teaspoon of crushed garlic
- ½ cup of balsamic vinegar
- 1 teaspoon of dried oregano
- 1 teaspoon of dried rosemary
- ½ teaspoons of dried thyme
- Salt for taste
- A dash of black pepper
Method
- Season the chicken breasts on both sides with the garlic. Rub the salt and black pepper.
- Place a large skillet over medium heat. Add in the olive oil and once hot, add in the chicken. Cook for 3 to 5 minutes on each side or until browned.
- Add in the chopped onions. Continue to cook for 5 minutes.
- Add the chopped tomatoes and balsamic vinegar over the chicken.
- Allow the chicken to simmer until cooked through.
- Season it with the dried oregano, dried rosemary and dried thyme.
- Remove and serve.
